Ingredients

1 1/4 cups all-purpose flour
1/3 cup white sugar
1 3/4 cups light cream
1/8 teaspoon salt
6 tablespoons white sugar
1/4 teaspoon ground cinnamon
6 tablespoons unsalted butter
4 teaspoons cornstarch
4 egg yolks
1 tablespoon unsalted butter
1 teaspoon vanilla extract
1 tablespoon kirschwasser

1 (11 inch) shortbread tart crust, baked
2/3 cup apricot preserves
2 tablespoons water
2 1/2 pints fresh raspberries
2 1/2 tablespoons sifted confectioners' sugar

Directions

The oven to 350 degrees F (175 degrees C) oven.
Place 6 tablespoons butter in a saucepan. Melt slowly. Cool until lukewarm.
