Mashed Potato Pancakes Southern Style

Combine all ingredients in bowl. Whisk together until well combined. The consistency should be similar to the cornbread mixture. Heat the oil in a pan with a layer of medium-high heat. (Cast Iron skillet, brown nicely). Scoop batter 4 inch rounds 3 1/2 form. Rich dark golden brown, brown on all sides. Potato pancakes, regular pancakes thick should look like. Place on paper towels to drain excess oil. Do not place on top of each other or the bottom will be soggy pancakes
2 cups mashed potatoes 1/3 cup onion, chopped finely 1 teaspoon garlic, minced 1/2 teaspoon salt 1/4 teaspoon pepper 2 tablespoons sour cream 5 dashes Tabasco sauce 2 eggs (or egg substitute) 2 -3 tablespoons flour
